Can I get back to 4.0.1 by using “Reset” from the iPhone 4

I was wondering if I could do a re-set from the Settings/General/Reset option on the phone and then backing up the data. Would the reset take me back to the factory delivered settings and iOS ?  Would restoring from my backup just restore the files and apps or would it also update the iOS?
